Our Rosé is made from a clone of Xinomavro which has very low pigment density, making it perfect for dry rose wine. The extended soak time allows for full characteristic development. On the nose the wine expresses a delicate blend of wild strawberry aromatics with rose petal and fresh heirloom tomato; kind of like the perfect summer salad.
6 months in stainless steel
8-10 hour cold maceration of 70% of the fruit at 10°C. 30% free-run juice. Fermentation at 16°C for 14 days. Filtered and fined without animal products. Our wines are vegan
